- 1 kilogram ripe tomatoes, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar, optional
- 1/4 cup fresh basil, chopped
- 1/4 cup cream, optional
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion until soft, then add garlic and cook briefly.
- Add tomatoes, vegetable broth, salt, black pepper, and sugar if using.
- Simmer 20 to 25 minutes until tomatoes soften.
- Blend until smooth.
- Stir in basil and adjust seasoning.
- Serve with optional cream swirl.
