Description

A smooth and comforting tomato soup made with ripe tomatoes, garlic, and fresh basil, blended until silky.


Ingredients

  • 1 kilogram ripe tomatoes, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar, optional
  • 1/4 cup fresh basil, chopped
  • 1/4 cup cream, optional

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft, then add garlic and cook briefly.
  3. Add tomatoes, vegetable broth, salt, black pepper, and sugar if using.
  4. Simmer 20 to 25 minutes until tomatoes soften.
  5. Blend until smooth.
  6. Stir in basil and adjust seasoning.
  7. Serve with optional cream swirl.
