Ingredients
Scale
- 1 1/2 pounds chicken breast, cut into bite-sized chunks
- 1 large red bell pepper, cut into squares
- 1 large yellow bell pepper, cut into squares
- 1 large red onion, cut into wedges
- 1 medium zucchini, sliced into thick rounds
- 3 tablespoons olive oil
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon fine salt, or to taste
- 1/2 teaspoon ground black pepper, or to taste
- 2 tablespoons fresh lemon juice
Instructions
- Preheat grill or grill pan over medium high heat until hot.
- In a bowl whisk olive oil, soy sauce, honey, garlic, paprika, salt, pepper, and lemon juice. Add chicken and toss to coat. Marinate 30 minutes.
- If using wooden skewers, soak them in water for 30 minutes. Lightly oil grill grates.
- Thread chicken, red pepper, yellow pepper, red onion, and zucchini onto skewers, alternating ingredients.
- Grill skewers 10 to 12 minutes, turning occasionally and brushing with reserved marinade, until chicken is cooked through and lightly charred.
- Transfer to a platter and rest 3 to 5 minutes to keep juices in.
- Serve hot with lemon wedges or fresh herbs if desired.
Notes
- Reserve some marinade before adding raw chicken to use for basting or drizzling.
- Cut all ingredients into similar sizes for even cooking.
- Do not overcrowd the skewers, leave small gaps for heat circulation.
