Description

Juicy, colorful barbecue skewers loaded with tender marinated chicken and charred veggies, kissed by smoky heat and finished with a bright lemony glaze.


Ingredients

  • 1 1/2 pounds chicken breast, cut into bite-sized chunks
  • 1 large red bell pepper, cut into squares
  • 1 large yellow bell pepper, cut into squares
  • 1 large red onion, cut into wedges
  • 1 medium zucchini, sliced into thick rounds
  • 3 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon fine salt, or to taste
  • 1/2 teaspoon ground black pepper, or to taste
  • 2 tablespoons fresh lemon juice


Instructions

  1. Preheat grill or grill pan over medium high heat until hot.
  2. In a bowl whisk olive oil, soy sauce, honey, garlic, paprika, salt, pepper, and lemon juice. Add chicken and toss to coat. Marinate 30 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes. Lightly oil grill grates.
  4. Thread chicken, red pepper, yellow pepper, red onion, and zucchini onto skewers, alternating ingredients.
  5. Grill skewers 10 to 12 minutes, turning occasionally and brushing with reserved marinade, until chicken is cooked through and lightly charred.
  6. Transfer to a platter and rest 3 to 5 minutes to keep juices in.
  7. Serve hot with lemon wedges or fresh herbs if desired.

Notes

  • Reserve some marinade before adding raw chicken to use for basting or drizzling.
  • Cut all ingredients into similar sizes for even cooking.
  • Do not overcrowd the skewers, leave small gaps for heat circulation.
