- 1 large head red cabbage, thinly sliced
- 1 large apple, thinly sliced
- 1 medium yellow onion, thinly sliced
- 2 tablespoons olive oil
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 cup water
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced onion and cook for 3 to 4 minutes until softened.
- Stir in sliced red cabbage and apple and cook for 5 minutes, stirring occasionally.
- Add apple cider vinegar, brown sugar, salt, black pepper, and water. Stir to combine.
- Cover and simmer on low heat for 40 to 50 minutes, stirring occasionally, until cabbage is tender.
- Taste and adjust seasoning if needed.
- Serve warm.
