- 3/4 cup mashed sweet potato
- 1 cup warm milk
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 3 1/2 cups all purpose flour
- 1 teaspoon salt
Instructions
- Combine warm milk and active dry yeast and let sit 5 minutes until foamy.
- Stir in mashed sweet potato, granulated sugar, melted unsalted butter, and egg.
- Add all purpose flour and salt gradually to form a soft dough.
- Knead for 8 minutes until smooth and elastic.
- Place in greased bowl, cover, and let rise 1 hour.
- Divide into 12 pieces and shape into balls. Place in greased 9×13 inch baking dish.
- Cover and let rise 30 to 40 minutes.
- Bake at 375 degrees Fahrenheit for 18 to 22 minutes until golden.
- Cool slightly before serving.
Notes
- Use smooth mashed sweet potato.
- Allow dough to rise fully for fluffiness.
- Do not overbake to keep rolls soft.
- Freeze baked rolls up to 2 months.
