- 4 large boneless skinless chicken breasts, about 6 to 8 ounces each
- 2 cups dry bread cubes
- 1 cup chicken broth
- 2 tablespoons unsalted butter, melted
- 1 small onion, finely chopped
- 1 stalk celery, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F and lightly grease a baking dish.
- In a mixing bowl, combine bread cubes, chicken broth, melted butter, onion, celery, garlic, thyme, parsley, salt, and black pepper. Stir until evenly moistened.
- Cut a pocket into each chicken breast without slicing all the way through.
- Spoon the stuffing evenly into each pocket and secure with toothpicks if needed.
- Brush the outside of the chicken with olive oil and place in the prepared baking dish.
- Bake for 30 to 35 minutes, or until the internal temperature reaches 165°F.
- Let rest for 5 minutes before removing toothpicks, slicing, and serving.

- Do not overstuff the chicken to prevent splitting.
- Allow the stuffing mixture to cool slightly before filling for easier handling.
