Description

  • 4 large boneless skinless chicken breasts, about 6 to 8 ounces each
  • 2 cups dry bread cubes
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter, melted
  • 1 small onion, finely chopped
  • 1 stalk celery, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.
  2. In a mixing bowl, combine bread cubes, chicken broth, melted butter, onion, celery, garlic, thyme, parsley, salt, and black pepper. Stir until evenly moistened.
  3. Cut a pocket into each chicken breast without slicing all the way through.
  4. Spoon the stuffing evenly into each pocket and secure with toothpicks if needed.
  5. Brush the outside of the chicken with olive oil and place in the prepared baking dish.
  6. Bake for 30 to 35 minutes, or until the internal temperature reaches 165°F.
  7. Let rest for 5 minutes before removing toothpicks, slicing, and serving.

  • Do not overstuff the chicken to prevent splitting.
