Description

Bright and fresh smashed fava beans on toast topped with shaved pecorino and mint. A simple elegant spring inspired vegetarian dish.


Ingredients

  • 2 cups fresh fava beans, shelled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 4 thick slices rustic bread
  • 1/4 cup shaved pecorino cheese
  • 2 tablespoons fresh mint leaves, torn

Instructions

  1. Bring a pot of salted water to a boil.
  2. Blanch fava beans for 2 to 3 minutes, then drain and cool. Remove outer skins.
  3. Mash peeled beans with olive oil, lemon juice, salt, and black pepper.
  4. Toast bread slices until golden.
  5. Spread fava mash over toast.
  6. Top with shaved pecorino and mint leaves.
  7. Serve immediately.
