Hearty Sausage Stuffed Peppers filled with seasoned Italian sausage, rice, tomatoes, and topped with melted mozzarella and Parmesan.

- 6 large bell peppers, halved and seeds removed
- 1 pound Italian sausage, casings removed
- 1 1/2 cups cooked white rice
- 1 can (14 ounces) diced tomatoes, drained
- 1/2 cup yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Heat olive oil in a skillet. Sauté onion and garlic for 2 to 3 minutes.
- Add Italian sausage and cook until browned and fully cooked.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Cook 2 to 3 minutes.
- Arrange pepper halves in baking dish and fill evenly with sausage mixture. Top with mozzarella and Parmesan.
- Cover loosely with foil and bake 25 minutes. Remove foil and bake 10 to 15 minutes until cheese is melted and peppers are tender.
- Let rest 5 minutes before serving.

- Choose peppers that stand upright.
- Do not overcook rice before mixing.
- Cover with foil for even baking.
- Store leftovers up to four days.
