Description

Hearty Sausage Stuffed Peppers filled with seasoned Italian sausage, rice, tomatoes, and topped with melted mozzarella and Parmesan.


Ingredients

  • 6 large bell peppers, halved and seeds removed
  • 1 pound Italian sausage, casings removed
  • 1 1/2 cups cooked white rice
  • 1 can (14 ounces) diced tomatoes, drained
  • 1/2 cup yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Heat olive oil in a skillet. Sauté onion and garlic for 2 to 3 minutes.
  3. Add Italian sausage and cook until browned and fully cooked.
  4. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Cook 2 to 3 minutes.
  5. Arrange pepper halves in baking dish and fill evenly with sausage mixture. Top with mozzarella and Parmesan.
  6. Cover loosely with foil and bake 25 minutes. Remove foil and bake 10 to 15 minutes until cheese is melted and peppers are tender.
  7. Let rest 5 minutes before serving.

  • Choose peppers that stand upright.
  • Do not overcook rice before mixing.
  • Cover with foil for even baking.
  • Store leftovers up to four days.
