- 4 large dill pickles, sliced into thick rounds
- 8 ounces corned beef, finely chopped
- 1/2 cup sauerkraut, well drained
- 6 slices Swiss cheese, cut into small squares
- 1/4 cup Thousand Island dressing
- 1/4 teaspoon black pepper (optional)
Instructions
- Preheat broiler to high and line a baking sheet with parchment paper.
- Pat pickle slices dry and arrange on baking sheet.
- Top each slice with chopped corned beef.
- Add a small spoonful of drained sauerkraut.
- Drizzle lightly with Thousand Island dressing and top with Swiss cheese.
- Broil for 2 to 4 minutes until cheese is melted and bubbly.
- Remove, sprinkle with black pepper if desired, and serve warm.
