Description

Tangy dill pickle slices topped with corned beef, sauerkraut, Swiss cheese, and dressing for a fun Reuben inspired appetizer.


Ingredients

  • 4 large dill pickles, sliced into thick rounds
  • 8 ounces corned beef, finely chopped
  • 1/2 cup sauerkraut, well drained
  • 6 slices Swiss cheese, cut into small squares
  • 1/4 cup Thousand Island dressing
  • 1/4 teaspoon black pepper (optional)

Instructions

  1. Preheat broiler to high and line a baking sheet with parchment paper.
  2. Pat pickle slices dry and arrange on baking sheet.
  3. Top each slice with chopped corned beef.
  4. Add a small spoonful of drained sauerkraut.
  5. Drizzle lightly with Thousand Island dressing and top with Swiss cheese.
  6. Broil for 2 to 4 minutes until cheese is melted and bubbly.
  7. Remove, sprinkle with black pepper if desired, and serve warm.
