Description

Ingredients

  • 1 cup vanilla protein powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup milk
  • 1/2 cup plain Greek yogurt

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F and line an 8 by 4 inch loaf pan with parchment paper.
  2. In a large bowl, whisk together oat flour, protein powder, baking powder, and salt.
  3. In another bowl, whisk eggs, milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  5. Pour batter into the prepared loaf pan and smooth the top evenly.
  6. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
