- 2 tablespoons unsalted butter (melted)

Instructions
- Heat oil in a heavy-bottomed pot to 350°F and prepare a wire rack or paper towel-lined tray for draining.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and nutmeg.
- In a separate bowl, whisk eggs, milk, mashed potatoes, melted butter, and vanilla extract.
- Combine wet and dry ingredients to form a soft dough. Avoid overmixing.
- On a floured surface, roll dough to ½-inch thickness and cut using a doughnut cutter.
- Fry doughnuts in batches for 1–2 minutes per side until golden brown.
- Remove and drain on a wire rack. Dust with powdered sugar or glaze while warm.
