- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup pistachio cream spread
- 24 ladyfinger cookies
- 1 cup strong brewed coffee, cooled
- 1/3 cup finely chopped pistachios
Instructions
- Ensure your 9×9 inch dish is clean and ready for layering.
- In a large bowl, whip heavy cream and sugar until soft peaks form.
- In a separate bowl, gently mix mascarpone and vanilla extract until smooth.
- Fold the whipped cream into the mascarpone mixture until light and fully combined.
- Spread a thin layer of mascarpone mixture on the bottom of the dish.
- Quickly dip each ladyfinger into cooled coffee and arrange in a single layer in the dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Drizzle half of the pistachio cream spread evenly over the layer.
- Repeat with another layer of dipped ladyfingers, remaining mascarpone mixture, and remaining pistachio cream.
- Refrigerate for at least 6 hours to allow layers to set.
- Before serving, sprinkle finely chopped pistachios evenly over the top.
- Slice and serve chilled.
