- 6 to 7 pounds bone-in prime rib roast
- 2 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 6 garlic cloves, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons olive oil
- 2 large onions, quartered
Instructions
- Preheat your oven to 450°F and allow the prime rib to come to room temperature for 1 hour.
- In a bowl, combine minced garlic, rosemary, olive oil, salt, and pepper into a paste.
- Place quartered onions in the bottom of a roasting pan and set the roast bone-side down on top.
- Rub the garlic-herb paste all over the roast evenly.
- Roast at 450°F for 20 minutes, then reduce oven temperature to 325°F and continue roasting for 90 minutes to 2 hours, until internal temperature reaches 120°F for medium-rare.
- Remove from oven, tent with foil, and let rest for at least 20 minutes.
- Carve against the grain and serve with pan drippings or horseradish sauce.
