Description

A light and vibrant pasta tossed with fresh tomato sauce made from ripe tomatoes, garlic, olive oil, and basil. Simple, quick, and full of fresh flavor.


Ingredients

  • 12 ounces spaghetti or linguine
  • 4 cups ripe tomatoes, chopped
  • 2 cloves garlic, finely minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt, plus more for pasta water
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large bowl, combine chopped tomatoes, minced garlic, olive oil, 1 teaspoon salt, and black pepper. Let sit at room temperature for 15 to 20 minutes.
  2. Bring a large pot of salted water to a boil and cook pasta until al dente according to package instructions.
  3. Reserve 1/2 cup of pasta cooking water before draining.
  4. Drain pasta and immediately add it to the bowl with the tomato mixture.
  5. Toss gently, adding reserved pasta water as needed to loosen the sauce.
  6. Stir in fresh basil just before serving.
  7. Serve immediately.

Notes

  • Use very ripe tomatoes for best flavor.
  • Salt tomatoes early to draw out juices.
  • Serve warm or at room temperature.
  • Store leftovers in the refrigerator for up to 3 days.
