Description
A light and vibrant pasta tossed with fresh tomato sauce made from ripe tomatoes, garlic, olive oil, and basil. Simple, quick, and full of fresh flavor.

- 12 ounces spaghetti or linguine
- 4 cups ripe tomatoes, chopped
- 2 cloves garlic, finely minced
- 1/4 cup extra virgin olive oil
- 1 teaspoon salt, plus more for pasta water
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- In a large bowl, combine chopped tomatoes, minced garlic, olive oil, 1 teaspoon salt, and black pepper. Let sit at room temperature for 15 to 20 minutes.
- Bring a large pot of salted water to a boil and cook pasta until al dente according to package instructions.
- Reserve 1/2 cup of pasta cooking water before draining.
- Drain pasta and immediately add it to the bowl with the tomato mixture.
- Toss gently, adding reserved pasta water as needed to loosen the sauce.
- Stir in fresh basil just before serving.
- Serve immediately.
Notes
- Use very ripe tomatoes for best flavor.
- Salt tomatoes early to draw out juices.
- Serve warm or at room temperature.
- Store leftovers in the refrigerator for up to 3 days.
