Description

Ingredients

  • 2 large eggs

  • 1/2 cup powdered sugar
  • 1 to 2 tablespoons extra orange juice for glaze


Instructions

  1. Preheat oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and orange zest.
  3. In a separate bowl, whisk together orange juice, Greek yogurt, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Divide batter evenly into muffin liners, filling each about three quarters full.
  6. Bake for 18 to 22 minutes, or until tops are golden and a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool slightly. In a small bowl, mix powdered sugar with 1 to 2 tablespoons orange juice to create a glaze, then drizzle over muffins.
  8. Serve warm or at room temperature.
