Instructions
- Preheat oven to 375°F and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and orange zest.
- In a separate bowl, whisk together orange juice, Greek yogurt, vegetable oil, eggs, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Divide batter evenly into muffin liners, filling each about three quarters full.
- Bake for 18 to 22 minutes, or until tops are golden and a toothpick inserted in the center comes out clean.
- Allow muffins to cool slightly. In a small bowl, mix powdered sugar with 1 to 2 tablespoons orange juice to create a glaze, then drizzle over muffins.
- Serve warm or at room temperature.
