- 2 pounds Yukon Gold potatoes, peeled and sliced into 1 inch rounds
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
- 1 cup chicken or vegetable broth, warmed
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 450°F.
- Toss potato rounds with melted butter, olive oil, salt, and black pepper.
- Arrange in a single layer in a baking dish.
- Roast for 20 minutes, flip, and roast another 15 minutes until golden.
- Add minced garlic, fresh thyme, and warm broth to the dish.
- Return to oven and roast for 15 to 20 more minutes until broth is mostly absorbed and potatoes are tender.
- Spoon remaining sauce over potatoes and serve warm.
Notes
- Slice potatoes evenly for best texture.
- Do not overcrowd the pan.
- Use warm broth to maintain oven temperature.
