Description

Crispy on the outside and creamy on the inside, these melting potatoes are roasted with butter, garlic, and broth for a rich and flavorful side dish.


Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and sliced into 1 inch rounds
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 cup chicken or vegetable broth, warmed
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 450°F.
  2. Toss potato rounds with melted butter, olive oil, salt, and black pepper.
  3. Arrange in a single layer in a baking dish.
  4. Roast for 20 minutes, flip, and roast another 15 minutes until golden.
  5. Add minced garlic, fresh thyme, and warm broth to the dish.
  6. Return to oven and roast for 15 to 20 more minutes until broth is mostly absorbed and potatoes are tender.
  7. Spoon remaining sauce over potatoes and serve warm.

  • Slice potatoes evenly for best texture.
  • Do not overcrowd the pan.
  • Use warm broth to maintain oven temperature.
