Description

Smoky grilled cauliflower steaks topped with melted cheddar, cool sour cream, and fresh green onions for a satisfying and flavorful vegetarian main dish.


Ingredients

  • 1 large head cauliflower, sliced into 1 inch thick steaks
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons green onions, finely chopped
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat grill or grill pan to medium high heat, about 400 degrees Fahrenheit.
  2. In a small bowl, mix olive oil, salt, black pepper, and garlic powder. Brush evenly over both sides of the cauliflower steaks.
  3. Lightly oil the grill grates to prevent sticking.
  4. Place cauliflower steaks on the grill in a single layer.
  5. Grill for 5 to 6 minutes per side until tender and charred. During the last 2 minutes, sprinkle shredded cheddar over each steak and close the lid to melt.
  6. Remove from heat and top with sour cream, chopped green onions, and fresh parsley.
  7. Serve warm while cheese is melted and edges are slightly crisp.

Notes

  • Cut thick cauliflower steaks to prevent breaking during grilling.
  • Keep the grill lid closed while melting the cheese for even heat.
  • For extra smoky flavor, add a pinch of smoked paprika.
  • Leftovers can be reheated in a 375 degrees Fahrenheit oven for about 8 minutes.
