Ingredients

- 1 cup dried brown lentils
- 1 bunch Swiss chard, stems removed and leaves chopped
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large soup pot over medium heat.
- Add olive oil, onion, carrots, and celery, and cook until softened.
- Stir in garlic and lentils, cooking briefly until fragrant.
- Pour in vegetable broth and bring to a gentle boil.
- Reduce heat and simmer for 25 minutes.
- Add Swiss chard and cook for 5 minutes until wilted.
- Season with salt and pepper and serve warm.
Notes
- Rinse lentils well before cooking.
- Add extra broth if the soup thickens too much.
