Description

A silky and bright lemon pie enhanced with tangy sumac and nestled in a buttery Ritz cracker crust, creating the perfect balance of sweet, tart, and lightly salty flavors.


Ingredients

  • 2 cups Ritz crackers finely crushed
  • 1/2 cup unsalted butter melted
  • 3/4 cup granulated sugar
  • 1 can 14 ounces sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon ground sumac plus extra for garnish
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix crushed Ritz crackers with melted butter until evenly coated.
  3. Press mixture firmly into a 9 inch pie dish covering bottom and sides.
  4. Bake crust for 8 minutes and allow to cool slightly.
  5. Whisk together sweetened condensed milk, egg yolks, granulated sugar, fresh lemon juice, lemon zest, ground sumac, and salt until smooth.
  6. Pour filling into warm crust.
  7. Bake for 15 to 18 minutes until center is just set but slightly jiggly.
  8. Cool to room temperature then refrigerate at least 3 hours before serving. Garnish with extra sumac.
