- 2 cups Ritz crackers finely crushed
- 1/2 cup unsalted butter melted
- 3/4 cup granulated sugar
- 1 can 14 ounces sweetened condensed milk
- 4 large egg yolks
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon ground sumac plus extra for garnish
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Mix crushed Ritz crackers with melted butter until evenly coated.
- Press mixture firmly into a 9 inch pie dish covering bottom and sides.
- Bake crust for 8 minutes and allow to cool slightly.
- Whisk together sweetened condensed milk, egg yolks, granulated sugar, fresh lemon juice, lemon zest, ground sumac, and salt until smooth.
- Pour filling into warm crust.
- Bake for 15 to 18 minutes until center is just set but slightly jiggly.
- Cool to room temperature then refrigerate at least 3 hours before serving. Garnish with extra sumac.
