- 16 ounces mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 3 large lemons (zest and juice)
- 24 ladyfingers (Savoiardi)
- 1 cup water
- 2 tablespoons honey or sugar
- 1 teaspoon vanilla extract
- Powdered sugar (optional, for dusting)
Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form. Set aside.
- In a separate bowl, combine mascarpone cheese, granulated sugar, lemon juice, lemon zest, and vanilla extract. Mix until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy.
- In a shallow dish, mix water, honey (or sugar), and a little lemon juice to create the soaking syrup.
- Quickly dip each ladyfinger into the syrup and line the bottom of a 9×9 dish.
- Spread half of the mascarpone mixture over the ladyfingers evenly.
- Repeat the process with another layer of soaked ladyfingers and top with the remaining cream mixture.
- Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
- Before serving, dust with powdered sugar and extra lemon zest if desired. Slice and serve chilled.
