Description

Ingredients

  • 1/2 cup granulated sugar (for crust)
  • 1/2 cup granulated sugar (for filling)
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup fresh blueberries
  • Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
  2. Mix flour, 1/2 cup sugar (for crust), salt, and melted butter in a bowl until crumbly. Press into prepared pan and bake for 15 minutes.
  3. In another bowl, beat softened cream cheese until smooth. Add remaining 1/2 cup sugar, eggs, vanilla, lemon zest, and juice. Mix until just combined.
  4. Gently fold in blueberries and pour filling over the baked crust.
  5. Bake for 25–30 minutes until the center is set and edges are lightly golden.
  6. Cool to room temperature, then refrigerate for at least 2 hours before slicing.
  7. Cut into squares and serve chilled. Optional: top with powdered sugar or whipped cream.
