- 3/4 cup granulated erythritol
- 3 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon apple cider vinegar
- 1 tablespoon red food coloring
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/2 cup powdered erythritol
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and line two 8 inch round cake pans with parchment paper. Lightly grease the pans.
- In a bowl, whisk together almond flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs and granulated erythritol until slightly fluffy.
- Add melted butter, almond milk, vanilla extract, apple cider vinegar, and red food coloring to the wet mixture and mix until combined.
- Gradually add the dry ingredients into the wet ingredients, mixing just until a smooth batter forms.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 20 to 25 minutes until a toothpick inserted in the center comes out clean.
- Allow cakes to cool completely before removing from pans.
- For the frosting, beat cream cheese and softened butter until smooth and creamy.
- Add powdered erythritol and vanilla extract to the frosting and beat until fluffy.
- Spread frosting between cake layers and over the top and sides of the cake.

- Bring all refrigerated ingredients to room temperature before mixing.
- Chill the cake briefly before slicing for cleaner layers.
