- 1/2 cup grated parmesan cheese
- 1 large egg

- 1 cup heavy cream
- 1/2 cup shredded mozzarella
- 1/4 cup grated parmesan for sauce
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a gentle boil.
- In a bowl, mix ricotta, flour, parmesan, egg, salt, pepper, and nutmeg until a soft dough forms.
- Shape the mixture into small balls and place them on a floured tray.
- In a saucepan, melt butter and stir in heavy cream, mozzarella, and parmesan until smooth.
- Lower the gnudi into the simmering water and cook until they float, about 3 to 4 minutes.
- Transfer the gnudi to the cheese sauce and let them absorb flavor.
- Garnish with parsley and serve warm.
