Description

Ingredients

  • 10 to 12 medium Roma tomatoes, halved lengthwise
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder


Instructions

  1. Preheat oven to 225°F (110°C).
  2. In a large bowl, toss halved tomatoes with olive oil, salt, pepper, garlic powder, and oregano.
  3. Line a baking sheet with parchment paper and arrange tomatoes cut-side up in a single layer.
  4. Bake for 3 to 4 hours, checking after 3 hours, until shriveled but still soft in the center.
  5. Let cool completely on the tray before storing or serving.
