Description

Honey Glazed Carrots are tender, sweet, and perfectly caramelized in a glossy honey-butter glaze. This easy side dish adds warmth and elegance to any meal, from weeknight dinners to festive holiday spreads.


Ingredients

  • 2 pounds carrots, peeled and cut into sticks or rounds
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme, finely chopped (optional)
  • 1 tablespoon butter, melted


Instructions

  1. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, toss carrots with honey, olive oil, melted butter, salt, pepper, and thyme (if using).
  3. Spread carrots in a single layer on the prepared baking sheet.
  4. Roast for 20 to 25 minutes, stirring once halfway through, until carrots are tender and caramelized.
  5. Remove from oven and spoon extra glaze from the pan over the carrots.
  6. Transfer to a serving dish, garnish with extra thyme if desired, and serve warm.
