- 2 pounds carrots, peeled and cut into sticks or rounds
- 3 tablespoons honey
- 2 tablespoons olive oil
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon fresh thyme, finely chopped (optional)
- 1 tablespoon butter, melted
Instructions
- Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- In a large bowl, toss carrots with honey, olive oil, melted butter, salt, pepper, and thyme (if using).
- Spread carrots in a single layer on the prepared baking sheet.
- Roast for 20 to 25 minutes, stirring once halfway through, until carrots are tender and caramelized.
- Remove from oven and spoon extra glaze from the pan over the carrots.
- Transfer to a serving dish, garnish with extra thyme if desired, and serve warm.

- Use evenly cut carrots for uniform roasting.
