- 1 sheet puff pastry, thawed
- 6 large eggs
- 1 cup shredded cheddar or Gruyere cheese
- 2 tablespoons milk or cream
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon olive oil
- 1 tablespoon fresh herbs, chopped (optional)
Instructions
- Preheat the oven to 400°F and lightly grease a muffin tin or small tart molds.
- Whisk the milk with salt and pepper in a small bowl.
- Cut the puff pastry into 6 squares and press each one gently into the molds.
- Add a handful of cheese to each pastry cup.
- Crack one egg into each tart and drizzle a little of the milk mixture over the top.
- Bake for 12 to 15 minutes or until the pastry is golden and the eggs are cooked to your liking.
- Sprinkle herbs or extra pepper on top and serve warm.

- Keep the pastry cold before baking for maximum flakiness.
