Description

Fluffy, savory scones packed with sharp cheddar, diced ham, and fresh chives. Perfect for breakfast, brunch, or a satisfying snack.

Ingredients

Scale
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup shredded cheddar cheese
  • 3/4 cup cooked ham, diced
  • 2 tablespoons fresh chives, finely chopped
  • 3/4 cup whole milk, cold
  • 1 large egg, lightly beaten (for brushing)

Instructions

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, baking powder, and salt. Cut in the cold butter until mixture resembles coarse crumbs.
  3. Stir in shredded cheddar, diced ham, and chopped chives.
  4. Add cold milk and gently mix until a soft dough forms. Do not overmix.
  5. Transfer dough to a lightly floured surface and pat into a 1 inch thick round.
  6. Cut into 8 even rounds and place on prepared baking sheet.
  7. Brush tops with beaten egg.
  8. Bake for 18 minutes or until golden brown and cooked through.
  9. Cool slightly on a rack before serving.

Notes

  • Keep butter cold for a tender texture.
  • Do not overmix the dough to avoid dense scones.
  • Chill shaped dough for 10 minutes before baking for extra height.
