Description

Juicy grilled tomatoes with smoky char marks, finished with a bold red wine vinaigrette and fresh herbs. A bright, tangy side dish that celebrates simple ingredients.


Ingredients

  • 4 large ripe tomatoes, sliced in half crosswise
  • 3 tablespoons olive oil, divided
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, finely minced
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat grill or grill pan to medium high heat.
  2. In a small bowl, whisk together 2 tablespoons olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until emulsified.
  3. Brush the cut sides of the tomatoes lightly with the remaining 1 tablespoon olive oil.
  4. Place tomatoes cut side down on the hot grill.
  5. Grill for 4 to 6 minutes per side until char marks form and tomatoes are tender but still hold their shape.
  6. Transfer tomatoes to a serving plate.
  7. Drizzle generously with vinaigrette and sprinkle with chopped parsley and thyme.
  8. Serve warm or at room temperature.

Notes

  • Use firm ripe tomatoes to prevent them from collapsing on the grill.
  • The vinaigrette can be made up to three days in advance and stored in the refrigerator.
  • Let tomatoes rest briefly after grilling before adding dressing for better flavor absorption.
