- 4 large ripe tomatoes, sliced in half crosswise
- 3 tablespoons olive oil, divided
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 small garlic clove, finely minced
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat grill or grill pan to medium high heat.
- In a small bowl, whisk together 2 tablespoons olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until emulsified.
- Brush the cut sides of the tomatoes lightly with the remaining 1 tablespoon olive oil.
- Place tomatoes cut side down on the hot grill.
- Grill for 4 to 6 minutes per side until char marks form and tomatoes are tender but still hold their shape.
- Transfer tomatoes to a serving plate.
- Drizzle generously with vinaigrette and sprinkle with chopped parsley and thyme.
- Serve warm or at room temperature.
Notes
- Use firm ripe tomatoes to prevent them from collapsing on the grill.
- The vinaigrette can be made up to three days in advance and stored in the refrigerator.
- Let tomatoes rest briefly after grilling before adding dressing for better flavor absorption.
