- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 1 medium zucchini, chopped
- 3 cups fresh spinach, packed
- 1/2 cup fresh parsley, chopped
- 4 cups vegetable broth
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place a large pot over medium heat and add the olive oil.
- Add the diced yellow onion and minced garlic. Sauté for about 3 to 4 minutes until softened and fragrant.
- Stir in the chopped zucchini and cook for about 5 minutes until slightly tender.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
- Add the fresh spinach and chopped parsley. Cook for 2 to 3 minutes until the greens are wilted but still vibrant.
- Remove the pot from heat and blend the soup using an immersion blender, or carefully transfer to a blender and blend until completely smooth.
- Stir in the Greek yogurt and lemon juice until fully incorporated.
- Season with salt and black pepper to taste, then serve warm.
