Description

Fluffy green eggs and ham frittata made with fresh spinach, savory ham, and melted cheddar cheese. A vibrant and satisfying one pan breakfast or brunch.


Ingredients

  • 8 large eggs
  • 2 cups fresh spinach, packed
  • 1 cup cooked ham, diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Heat olive oil in an oven safe skillet over medium heat and sauté spinach until wilted.
  3. In a mixing bowl, whisk eggs, milk, salt, and black pepper until smooth.
  4. Stir diced ham and shredded cheese into the egg mixture.
  5. Pour mixture into the skillet over the spinach.
  6. Cook on the stovetop for 2 to 3 minutes until edges begin to set.
  7. Transfer skillet to the oven and bake for 15 to 18 minutes until center is set.
  8. Remove from oven and sprinkle with chopped chives.
  9. Let rest for 5 minutes before slicing and serving.

Notes

  • Do not overbake to keep eggs tender.
  • Sauté spinach to remove excess moisture.
  • Let rest before slicing for cleaner wedges.
