- 8 large eggs
- 2 cups fresh spinach, packed
- 1 cup cooked ham, diced
- 1 cup shredded cheddar cheese
- 1/4 cup milk
- 1 tablespoon fresh chives, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil or butter
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Heat olive oil in an oven safe skillet over medium heat and sauté spinach until wilted.
- In a mixing bowl, whisk eggs, milk, salt, and black pepper until smooth.
- Stir diced ham and shredded cheese into the egg mixture.
- Pour mixture into the skillet over the spinach.
- Cook on the stovetop for 2 to 3 minutes until edges begin to set.
- Transfer skillet to the oven and bake for 15 to 18 minutes until center is set.
- Remove from oven and sprinkle with chopped chives.
- Let rest for 5 minutes before slicing and serving.
Notes
- Do not overbake to keep eggs tender.
- Sauté spinach to remove excess moisture.
