- 1 pound fresh green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Add green beans and cook for 3 to 4 minutes until tender crisp.
- Transfer beans immediately to ice water to stop cooking.
- Drain and pat dry.
- In a small bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and black pepper.
- In a large bowl, combine green beans, cherry tomatoes, and red onion.
- Pour dressing over salad and toss gently to coat.
- Sprinkle feta cheese on top and serve.
Notes
- Do not overcook green beans to keep them crisp.
- Dry beans well before adding dressing.
- Adjust seasoning to taste before serving.
