- 1 pound shelf stable gnocchi
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced
- 1 red bell pepper, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
Instructions
- Preheat grill to medium heat or oven to 400°F.
- In a large bowl, combine gnocchi, cherry tomatoes, zucchini, red bell pepper, olive oil, minced garlic, Italian seasoning, salt, and black pepper. Toss well to coat.
- Lay out large sheets of heavy duty foil.
- Divide the gnocchi mixture evenly among the foil sheets.
- Sprinkle shredded mozzarella evenly over each portion.
- Fold and seal the foil packets tightly to trap steam.
- Cook on the grill or in the oven for 15 to 20 minutes until vegetables are tender and cheese is melted.
- Carefully open the packets to release steam and serve warm.
