- 4 ears Fresh Corn on the Cob
- 4 tablespoons Unsalted Butter
- 2 Garlic Cloves, minced
- 1/2 cup Crumbled Feta Cheese
- 1–2 Red Chilies, thinly sliced
- 2 tablespoons Fresh Cilantro, chopped
- Salt and Black Pepper, to taste
- Lime Wedges, for serving
Instructions
- Preheat your grill or oven to 400°F (200°C).
- In a small bowl, combine softened butter, minced garlic, salt, and pepper.
- Line a baking sheet with foil or prep grill grates with oil.
- Brush garlic butter generously over the corn cobs.
- Roast or grill for 20 minutes, turning occasionally until lightly charred and tender.
- Remove from heat and top with crumbled feta, sliced chilies, and chopped cilantro.
- Serve warm with lime wedges on the side.
Notes
- Use fresh corn for best flavor and texture.
- For extra char, finish corn over open flame for 1–2 minutes.
- Add a dash of smoked paprika for extra depth.
