Instructions
- Peel the potatoes if desired and slice them into ultra-thin strands using a mandoline slicer.
- Soak the sliced potatoes in cold water for at least 30 minutes to remove excess starch.
- Drain and thoroughly dry the potatoes using paper towels.
- Heat vegetable oil in a heavy-bottomed pan to 350°F.
- Fry the potatoes in small batches for 2–3 minutes until golden and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Immediately sprinkle with minced garlic, chopped parsley, and salt while still hot.
