Description

Melt-in-your-mouth fondant sweet potatoes with a golden crust, infused with garlic, herbs, and buttery broth. A rich and comforting side dish that elevates any meal.

Ingredients

Scale
  • 3 large sweet potatoes, peeled and cut into 2-inch thick rounds
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 4 garlic cloves, smashed
  • 6 sprigs fresh thyme
  • 1 ½ cups chicken or vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat Your Equipment: Preheat your oven to 400°F (200°C) and heat an oven-safe skillet over medium-high heat.
  2. Combine Ingredients: Season the sweet potato rounds with salt and pepper. In a saucepan, melt the butter with olive oil, garlic, and thyme until fragrant.
  3. Prepare Your Cooking Vessel: Add olive oil to the skillet. Sear the sweet potatoes cut-side down for 4–5 minutes until golden.
  4. Assemble the Dish: Flip the rounds, pour in the butter mixture and broth, and let it simmer gently.
  5. Cook to Perfection: Transfer the skillet to the oven and roast for 30–35 minutes until the potatoes are tender and the broth has reduced.
  6. Finishing Touches: Spoon the buttery sauce over the potatoes and garnish with extra thyme.
  7. Serve and Enjoy: Serve warm and enjoy every rich, buttery bite.

Notes

  • Choose evenly sized sweet potatoes for even cooking.
  • Baste the potatoes once or twice during roasting for extra flavor.
  • Broil for 1–2 minutes at the end for a crisper top.
  • Can be made ahead and reheated in the oven.
