Scale
- 3 large sweet potatoes, peeled and cut into 2-inch thick rounds
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 4 garlic cloves, smashed
- 6 sprigs fresh thyme
- 1 ½ cups chicken or vegetable broth
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
Instructions
- Preheat Your Equipment: Preheat your oven to 400°F (200°C) and heat an oven-safe skillet over medium-high heat.
- Combine Ingredients: Season the sweet potato rounds with salt and pepper. In a saucepan, melt the butter with olive oil, garlic, and thyme until fragrant.
- Prepare Your Cooking Vessel: Add olive oil to the skillet. Sear the sweet potatoes cut-side down for 4–5 minutes until golden.
- Assemble the Dish: Flip the rounds, pour in the butter mixture and broth, and let it simmer gently.
- Cook to Perfection: Transfer the skillet to the oven and roast for 30–35 minutes until the potatoes are tender and the broth has reduced.

- Serve and Enjoy: Serve warm and enjoy every rich, buttery bite.
Notes
- Choose evenly sized sweet potatoes for even cooking.
- Baste the potatoes once or twice during roasting for extra flavor.

- Can be made ahead and reheated in the oven.
