Description

Cool down with these creamy, coffee-infused Espresso Martini Popsicles. Made with just four simple ingredients, they offer the bold flavor of espresso in a smooth, icy treat perfect for summer.


Ingredients

Scale
  • 1 cup espresso or strong cold brew
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut milk


Instructions

  1. In a bowl, whisk together the espresso, sweetened condensed milk, vanilla extract, and coconut milk until smooth.
  2. Let the mixture cool to room temperature if it’s warm.
  3. Pour into popsicle molds, leaving a small gap at the top.
  4. Insert sticks and tap the molds gently to remove air bubbles.
  5. Freeze for at least 6 hours or overnight.
  6. To unmold, run warm water over the outside of the mold for a few seconds and gently pull out the popsicles.

Notes

  • Use strong coffee for a richer taste.
  • Silicone molds make removal easier.
  • Add a dusting of cocoa or cinnamon before freezing for extra flavor.
