Cool down with these creamy, coffee-infused Espresso Martini Popsicles. Made with just four simple ingredients, they offer the bold flavor of espresso in a smooth, icy treat perfect for summer.

- 1 cup espresso or strong cold brew
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/2 cup coconut milk
Instructions
- In a bowl, whisk together the espresso, sweetened condensed milk, vanilla extract, and coconut milk until smooth.
- Let the mixture cool to room temperature if it’s warm.
- Pour into popsicle molds, leaving a small gap at the top.
- Insert sticks and tap the molds gently to remove air bubbles.
- Freeze for at least 6 hours or overnight.
- To unmold, run warm water over the outside of the mold for a few seconds and gently pull out the popsicles.
Notes
- Use strong coffee for a richer taste.
- Silicone molds make removal easier.
- Add a dusting of cocoa or cinnamon before freezing for extra flavor.
