- 1 pound ribeye steak, very thinly sliced
- 8 slices provolone cheese
- 1 large green bell pepper, thinly sliced
- 1 medium yellow onion, thinly sliced
- 4 hoagie rolls
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat your large skillet or griddle over medium-high heat until hot.
- In a bowl, season the sliced steak with salt and pepper. Set aside.
- Add olive oil to the skillet. Sauté onions and peppers for 5–7 minutes until soft and caramelized. Transfer to a plate.
- Add the beef to the same skillet in a single layer. Sear for 2–3 minutes per side until browned and cooked through.
- Return the sautéed veggies to the skillet. Mix with the beef and lay provolone slices over top. Cover with lid or foil for 1 minute to melt.
- Split and toast the hoagie rolls with butter in a separate pan or under the broiler.
- Fill each roll with the cheesy steak mixture. Serve hot and enjoy.
Notes
- Freeze the steak for 30 minutes before slicing for cleaner cuts.
- Use a cast iron skillet for best sear and flavor development.
- Toast your rolls right before serving to keep them crisp.
- Customize with mushrooms, hot peppers, or garlic butter.
