- 1 lb boneless skinless chicken breasts or thighs, cut into strips
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons honey
- Juice of 1 lime
- 2 cups cooked rice
- 1 avocado, sliced
- 1 red bell pepper, thinly sliced
- 1 cup fresh spinach or mixed greens
- Chopped cilantro or parsley for garnish (optional)
Instructions
- Pat chicken dry and season with Cajun seasoning, smoked paprika, cayenne (if using), salt, and pepper.
- Cook rice according to package instructions and keep warm.
- Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook 3–4 minutes per side until golden and cooked through.
- Lower heat, drizzle honey over the chicken, and toss to coat. Squeeze lime juice over top.
- Divide rice among bowls. Top with chicken, avocado, bell pepper, and greens. Garnish with herbs if using.
- Serve immediately.
Notes
- Don’t crowd the skillet to ensure the chicken gets crispy.
- Add honey at the end to prevent burning.
- Use any greens or leftover veggies for variety.
