- 6 medium Yukon Gold potatoes
- 4 tablespoons unsalted butter, melted
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Wash and thinly slice potatoes without cutting all the way through, keeping the base intact.
- In a bowl, mix melted butter, olive oil, garlic powder, salt, black pepper, and chopped thyme.
- Place potatoes upright in a baking dish.
- Brush butter mixture generously between slices and over the tops.
- Bake for 50 to 60 minutes until edges are crisp and golden and centers are tender.
- Let rest slightly before serving.
Notes
- Slice evenly for uniform cooking.
- Do not overcrowd the pan.
- Reheat in oven for best texture.
- Add cheese during last 10 minutes if desired.
