  • 2 cans (15 ounces each) butter beans, drained and rinsed
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place a large skillet over medium heat.
  2. Melt butter with olive oil in the skillet, then add minced garlic and cook for 1 to 2 minutes until fragrant but not browned.
  3. Pour in vegetable broth and stir gently to combine with the garlic butter mixture.
  4. Add drained butter beans, salt, black pepper, and red pepper flakes. Stir gently to coat.
  5. Simmer for 10 to 12 minutes. Lightly mash a few beans to thicken the sauce, then stir in heavy cream, lemon zest, and lemon juice. Simmer another 3 to 5 minutes until creamy.
  6. Taste and adjust seasoning if needed. Stir in fresh parsley.
  7. Serve warm, spooning extra sauce over the top.

  • Keep heat moderate after adding cream to prevent curdling.
