- 2 cans (15 ounces each) butter beans, drained and rinsed
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Place a large skillet over medium heat.
- Melt butter with olive oil in the skillet, then add minced garlic and cook for 1 to 2 minutes until fragrant but not browned.
- Pour in vegetable broth and stir gently to combine with the garlic butter mixture.
- Add drained butter beans, salt, black pepper, and red pepper flakes. Stir gently to coat.
- Simmer for 10 to 12 minutes. Lightly mash a few beans to thicken the sauce, then stir in heavy cream, lemon zest, and lemon juice. Simmer another 3 to 5 minutes until creamy.
- Taste and adjust seasoning if needed. Stir in fresh parsley.
- Serve warm, spooning extra sauce over the top.
Notes
- Keep heat moderate after adding cream to prevent curdling.
- If sauce becomes too thick, add a splash of broth to loosen it.
- Do not brown the garlic to avoid bitterness.
