- 1 can 15 ounces chickpeas, drained and rinsed
- 1/3 cup tahini
- 3 tablespoons fresh lemon juice
- 1 to 2 cloves garlic
- 2 tablespoons olive oil, plus extra for drizzling
- 1/2 teaspoon salt
- 2 to 4 tablespoons ice cold water
- Paprika, optional for garnish
Instructions
- Blend tahini and lemon juice until smooth.
- Add garlic, olive oil, and salt and blend.
- Add chickpeas and process until thick and creamy.
- Add ice water gradually while blending until smooth.
- Taste and adjust seasoning.
- Transfer to bowl, drizzle with olive oil, and sprinkle paprika.
Notes
- Blend longer for extra smooth texture.
- Add water slowly to control consistency.
- Store in airtight container up to 5 days.
