Description

Elegant crab toasts with asparagus made with creamy lemon crab spread on crisp bread and topped with tender asparagus spears.


Ingredients

  • 6 slices thick cut sourdough or country bread
  • 8 ounces lump crab meat, drained
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 12 asparagus spears, trimmed
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Blanch asparagus for 2 to 3 minutes and cool in ice water. Drain and pat dry.
  2. Mix cream cheese, mayonnaise, lemon zest, lemon juice, salt, and black pepper.
  3. Fold in crab meat gently.
  4. Toast bread slices until golden and crisp.
  5. Spread crab mixture over toast and top with asparagus.
  6. Sprinkle with chives and serve immediately.
