Description

Cowboy Candy (Candied Jalapeños) is a sweet, spicy, and addictive condiment made from jalapeño slices simmered in a tangy syrup. Perfect on crackers, burgers, or straight from the jar.


Ingredients

  • 1.5 pounds fresh jalapeños, sliced into rings
  • 3 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon crushed red pepper flakes (optional)


Instructions

  1. Wash and sterilize jars and lids. Prepare all tools and ingredients.
  2. In a saucepan, combine sugar, vinegar, turmeric, garlic powder, mustard seeds, ginger, and red pepper flakes. Bring to a boil, then reduce to a simmer for 5 minutes.
  3. Slice jalapeños into even rings. Use gloves to avoid irritation.
  4. Add jalapeños to the syrup and simmer for 4 minutes.
  5. Transfer jalapeños into jars using a slotted spoon. Fill jars with remaining syrup, leaving 1/4 inch headspace.
  6. Wipe jar rims clean. Seal with lids and let cool. Store in fridge or process in a water bath for long-term storage.
  7. Let sit for at least 24 hours before serving for best flavor.

Notes

  • Use gloves when slicing hot peppers to avoid irritation.
  • Let the jars sit for 3–5 days for the best flavor development.
  • Leftover syrup makes a delicious addition to marinades or dressings.
