Description

Rich, fudgy chocolate protein bites inspired by classic cosmic brownies, coated in dark chocolate and topped with colorful candy-coated chips. A no-bake, protein-packed snack perfect for meal prep or satisfying sweet cravings.

  • 1 cup old-fashioned rolled oats, finely blended into oat flour
  • 1/2 cup chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup creamy almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons milk
  • 1/2 cup dark chocolate chips
  • 2 tablespoons rainbow candy-coated chocolate chips

Instructions

  1. Line a baking sheet with parchment paper and clear space in the refrigerator for chilling.
  2. In a mixing bowl, stir together the oat flour, chocolate protein powder, and cocoa powder. Add almond butter, maple syrup, vanilla extract, and 2 tablespoons of milk. Mix until a thick dough forms, adding more milk if needed.
  3. Using a small scoop or your hands, portion the mixture into even balls and place them on the prepared baking sheet.
  4. Chill the bites in the refrigerator for about 20 minutes to firm up.
  5. Melt the dark chocolate chips in a microwave-safe bowl in short intervals, stirring until smooth.
  6. Dip each chilled bite into the melted chocolate and return to the baking sheet.
  7. Sprinkle the rainbow candy-coated chocolate chips on top before the chocolate sets. Chill again for 10 to 15 minutes until firm, then serve and enjoy.
