- 1/2 cup chocolate protein powder
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup creamy almond butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 2 to 3 tablespoons milk
- 1/2 cup dark chocolate chips
- 2 tablespoons rainbow candy-coated chocolate chips
Instructions
- Line a baking sheet with parchment paper and clear space in the refrigerator for chilling.
- In a mixing bowl, stir together the oat flour, chocolate protein powder, and cocoa powder. Add almond butter, maple syrup, vanilla extract, and 2 tablespoons of milk. Mix until a thick dough forms, adding more milk if needed.
- Using a small scoop or your hands, portion the mixture into even balls and place them on the prepared baking sheet.
- Chill the bites in the refrigerator for about 20 minutes to firm up.
- Melt the dark chocolate chips in a microwave-safe bowl in short intervals, stirring until smooth.
- Dip each chilled bite into the melted chocolate and return to the baking sheet.
- Sprinkle the rainbow candy-coated chocolate chips on top before the chocolate sets. Chill again for 10 to 15 minutes until firm, then serve and enjoy.
Notes
- Chill the dough before dipping to help the bites hold their shape.
