Soft, creamy copycat Starbucks egg bites made with blended eggs, cottage cheese, and melted cheese, baked gently for a smooth café-style texture that works perfectly for breakfast or meal prep.

- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (Gruyère, Monterey Jack, or similar)
- 1/4 cup finely diced red bell pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 300°F and place a baking dish inside to heat.
- Add the eggs, cottage cheese, shredded cheese, salt, and black pepper to a blender and blend until completely smooth.
- Lightly grease a silicone muffin pan and divide the diced red bell pepper evenly between the cavities.
- Pour the blended egg mixture into each mold, filling almost to the top.
- Carefully pour hot water into the baking dish to create a water bath, then place the muffin pan inside.
- Bake for 25 minutes until the egg bites are just set.
- Remove from the oven, let cool slightly, then gently remove from the molds and serve warm.
Notes
- Blend thoroughly for the smoothest texture.
- Do not overbake, as the egg bites will continue to set while cooling.
