Description

Soft, creamy copycat Starbucks egg bites made with blended eggs, cottage cheese, and melted cheese, baked gently for a smooth café-style texture that works perfectly for breakfast or meal prep.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (Gruyère, Monterey Jack, or similar)
  • 1/4 cup finely diced red bell pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 300°F and place a baking dish inside to heat.
  2. Add the eggs, cottage cheese, shredded cheese, salt, and black pepper to a blender and blend until completely smooth.
  3. Lightly grease a silicone muffin pan and divide the diced red bell pepper evenly between the cavities.
  4. Pour the blended egg mixture into each mold, filling almost to the top.
  5. Carefully pour hot water into the baking dish to create a water bath, then place the muffin pan inside.
  6. Bake for 25 minutes until the egg bites are just set.
  7. Remove from the oven, let cool slightly, then gently remove from the molds and serve warm.
