- 9 cups Rice Chex cereal
- 12 ounces white chocolate chips
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 15 chocolate sandwich cookies, crushed
- 1 1/2 cups powdered sugar
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a microwave safe bowl, combine white chocolate chips and unsalted butter. Microwave in 30 second intervals, stirring each time, until smooth. Stir in vanilla extract.
- Place Rice Chex cereal in a large mixing bowl.
- Pour the melted white chocolate mixture over the cereal and gently fold until evenly coated. Add crushed chocolate sandwich cookies and fold carefully.
- Transfer the coated cereal into a large zip top bag or container with powdered sugar. Shake gently until fully coated.
- Spread the mixture onto the prepared baking sheet and let cool completely.
- Once cooled, transfer to a serving bowl or airtight container and serve.
Notes
- Melt the chocolate slowly to prevent it from becoming grainy.
- Let the mixture cool completely before storing to maintain crunch.
