Description

Crisp-tender green beans sautéed in butter and tossed with toasted sliced almonds and lemon zest for a bright, elegant side dish that comes together in just 15 minutes.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 1/2 cup sliced almonds
  • 3 tablespoons unsalted butter
  • 1 clove garlic, minced (optional)
  • Zest of 1 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Ice water, for shocking beans


Instructions

  1. Bring a large pot of salted water to a boil and prepare a bowl with ice water.
  2. Blanch the green beans for 3–4 minutes until just tender, then transfer to the ice bath to stop cooking. Drain well.
  3. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced almonds and toast for 3–5 minutes until golden. Remove and set aside.
  4. In the same skillet, melt the remaining butter. Add garlic (if using) and sauté for 30 seconds until fragrant.
  5. Add the drained green beans to the skillet and toss to coat in the butter. Season with salt and pepper.
  6. Stir in the toasted almonds and lemon zest. Toss gently to combine.
  7. Transfer to a serving dish and serve warm.

  • Blanching and shocking the beans keeps them crisp and green.
  • Use high-quality butter for the best flavor.
  • Add lemon zest at the end for a fresh finish.
  • You can toast the almonds and blanch the beans ahead of time for faster prep.
