Description

- 1 pound fresh green beans, trimmed
- 1/2 cup sliced almonds
- 3 tablespoons unsalted butter
- 1 clove garlic, minced (optional)
- Zest of 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Ice water, for shocking beans
Instructions
- Bring a large pot of salted water to a boil and prepare a bowl with ice water.
- Blanch the green beans for 3–4 minutes until just tender, then transfer to the ice bath to stop cooking. Drain well.
- In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced almonds and toast for 3–5 minutes until golden. Remove and set aside.
- In the same skillet, melt the remaining butter. Add garlic (if using) and sauté for 30 seconds until fragrant.
- Add the drained green beans to the skillet and toss to coat in the butter. Season with salt and pepper.
- Stir in the toasted almonds and lemon zest. Toss gently to combine.
- Transfer to a serving dish and serve warm.

- Blanching and shocking the beans keeps them crisp and green.
- Use high-quality butter for the best flavor.
- Add lemon zest at the end for a fresh finish.
