Description

Soft, chewy no bake cinnamon bites made with oats, almond butter, and honey. These cozy little snacks taste like a cinnamon roll in energy bite form and are perfect for meal prep, quick breakfasts, or afternoon treats.


Ingredients

  • 1/2 cup creamy almond butter
  • 1/3 cup honey
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  1. In a medium mixing bowl, combine rolled oats, creamy almond butter, honey, ground cinnamon, vanilla extract, and salt. Stir until fully combined and slightly sticky.
  2. If the mixture feels too soft, refrigerate it for 10 to 15 minutes to firm up.
  3. Scoop about 1 tablespoon of the mixture and roll into a ball using your hands.
  4. Place each rolled bite onto a parchment lined plate or baking sheet.
  5. Refrigerate for at least 30 minutes to allow the bites to set properly.
  6. Lightly dust with an extra pinch of cinnamon if desired before serving.
  7. Serve chilled or allow to sit at room temperature for a few minutes for a softer texture.

Notes

  • If the mixture is too dry, add 1 teaspoon of honey at a time until it binds.
  • If the mixture is too wet, stir in 1 tablespoon of oats at a time.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 2 months and thaw overnight in the refrigerator.
