- 1/2 cup creamy almond butter
- 1/3 cup honey
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
- In a medium mixing bowl, combine rolled oats, creamy almond butter, honey, ground cinnamon, vanilla extract, and salt. Stir until fully combined and slightly sticky.
- If the mixture feels too soft, refrigerate it for 10 to 15 minutes to firm up.
- Scoop about 1 tablespoon of the mixture and roll into a ball using your hands.
- Place each rolled bite onto a parchment lined plate or baking sheet.
- Refrigerate for at least 30 minutes to allow the bites to set properly.
- Lightly dust with an extra pinch of cinnamon if desired before serving.
- Serve chilled or allow to sit at room temperature for a few minutes for a softer texture.
Notes
- If the mixture is too dry, add 1 teaspoon of honey at a time until it binds.
- If the mixture is too wet, stir in 1 tablespoon of oats at a time.
- Store in an airtight container in the refrigerator for up to 5 days.
- Freeze for up to 2 months and thaw overnight in the refrigerator.
