Description

Festive Christmas pinwheel cookies with bright red and green swirls, buttery sugar cookie flavor, and a tender texture perfect for holiday baking.


Ingredients

  • 2 1/2 cups all purpose flour
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • Red food coloring a few drops
  • Green food coloring a few drops
  • 2 tablespoons powdered sugar optional

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs, vanilla extract, and salt. Mix well.
  4. Gradually mix in flour and baking powder until a soft dough forms.
  5. Divide dough. Tint portions red and green. Roll into rectangles and layer or roll together tightly to form a log.
  6. Wrap and chill for at least 1 hour.
  7. Slice into 1/4 inch rounds and place on baking sheet.
  8. Bake 8 to 10 minutes until edges are lightly golden. Cool completely before serving.
