- 1 lb ground chicken
- 1 tsp chipotle chili powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 slices cheddar cheese
- 4 brioche buns, lightly toasted
- 4 lettuce leaves
- 4 tomato slices
- 1/4 cup mayonnaise
- 1 tbsp chipotle in adobo sauce, finely chopped
- 1 tsp lime juice
Instructions
- Preheat grill pan or skillet over medium-high heat and lightly oil the surface.
- In a bowl, mix ground chicken, chipotle powder, garlic powder, salt, and pepper until just combined.
- Shape into 4 equal patties, about 3/4 inch thick.
- Cook patties for 5–6 minutes per side until golden and cooked through.
- Top each patty with cheddar cheese during the last minute of cooking and let it melt.
- In a small bowl, mix mayonnaise, chipotle in adobo, and lime juice to make the chipotle mayo.
- Toast brioche buns, then assemble with lettuce, tomato, patty, and chipotle mayo.
- Serve warm and enjoy.
Notes
- Chill patties before cooking to help them hold their shape.
- Do not press down on the patties while cooking to keep them juicy.
- Brush buns with butter before toasting for extra flavor.
