Description

A comforting classic, Chicken à la King on Toast combines tender chicken and vegetables in a rich, creamy sauce served over crisp, golden toast. Perfect for cozy dinners or a quick yet elegant meal.

  • 2 cups cooked chicken breast, shredded or diced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1 cup chicken broth
  • 1 cup mushrooms, sliced
  • 1/2 cup green bell pepper, diced
  • 2 tablespoons pimentos, chopped
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley, chopped
  • 4 to 6 slices white bread or brioche toast


Instructions

  1. Preheat your oven to 350°F or prepare a toaster for the bread.
  2. In a large skillet, melt butter over medium heat. Add mushrooms and bell pepper, sauté until tender and lightly browned.
  3. Sprinkle flour over the vegetables, stirring constantly to form a roux.
  4. Slowly whisk in milk, cream, and chicken broth until smooth and thickened.
  5. Add shredded chicken and pimentos, stirring to coat evenly.
  6. Season with salt and black pepper. Simmer for 5–7 minutes until the sauce thickens and flavors blend.
  7. Toast the bread until golden brown.
  8. Spoon the creamy chicken mixture over the toast slices, garnish with parsley, and serve hot.

Notes

  • If the sauce gets too thick, add a splash of milk to loosen it.
  • Make the sauce ahead of time and reheat gently when ready to serve.
