- 2 cups cooked chicken breast, shredded or diced
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1 cup chicken broth
- 1 cup mushrooms, sliced
- 1/2 cup green bell pepper, diced
- 2 tablespoons pimentos, chopped
- Salt and black pepper to taste
- 1 tablespoon fresh parsley, chopped
- 4 to 6 slices white bread or brioche toast
Instructions
- Preheat your oven to 350°F or prepare a toaster for the bread.
- In a large skillet, melt butter over medium heat. Add mushrooms and bell pepper, sauté until tender and lightly browned.
- Sprinkle flour over the vegetables, stirring constantly to form a roux.
- Slowly whisk in milk, cream, and chicken broth until smooth and thickened.
- Add shredded chicken and pimentos, stirring to coat evenly.
- Season with salt and black pepper. Simmer for 5–7 minutes until the sauce thickens and flavors blend.
- Toast the bread until golden brown.
- Spoon the creamy chicken mixture over the toast slices, garnish with parsley, and serve hot.
Notes
- If the sauce gets too thick, add a splash of milk to loosen it.
- Make the sauce ahead of time and reheat gently when ready to serve.
